I must admit, I’m a sucker for toasts. And not just any toast— I want them to have flair. You know what I’m talking about too. A loaded avocado or ricotta toast is to die for. Today I’m sharing these recipes to commemorate our shared love of open faced toasts 4 ways.
These 4 open faced toasts are unique and surprisingly tasty. Perfect for sharing with friends or a quick snack.
Before you start, you’ve got to pick a fanatic bread to be the base of your toast. A sourdough is always a great choice, but my personal favorite for these open faced toasts is a hearty whole grains and seeds bread. Especially if you lightly toast it in a pan with a little ghee… oh my god.
Let’s get down to the nitty gritty…. 4 recipes for open faced toasts!
Creamy Avocado Pesto Toast with Spaghetti Squash
— 2 TBSP Creamy Avocado Pesto from this previous blog post!
— 1/4 Cup Roasted Spaghetti Squash (If you’ve never roasted a squash, its easy. Halve it, scoop out seeds, lightly rub with Grapeseed oil, and roast in the oven face down for 20-30 minutes at 400F. Shred out with a fork.)
— Fresh Basil
Tangy Yogurt and Fruits
— 2 TBSP Tangy Greek Yogurt
— 1/4 of a Pear, thinly sliced
— Fresh Blueberry Compote (Check out this recipe for my blueberry compote, or use a quality blueberry jelly with no added sugar)
Beet & Goat Cheese Open Faced Toast
— 2 TBSP Goat Cheese blended with 2 tsp fresh beet juice (or 1 tsp beet root powder and a touch of honey)
— 1 Fig Halved
— Fresh Amaranth Leaf, finely chiffonaded, for garnish
I love this recipe in particular because the flavors are unexpected. The sweet and tangy goat cheese blends perfectly with the earthy beet root, the figs add a fresh and sweet element, and the amaranth garnish is lightly astringent. Its absolutely the perfect open faced toast!
Dill Hummus Toast with Cucumber
— 2 TBSP Lemon and Dill Hummus from this blog post!
— 4-5 Thin Shavings of Cucumber
— Fresh Dill and Black Pepper
All these recipes are super simple! Just layer the ingredients onto your perfectly ghee’d toasts and serve!
